The board is food grade white paper, kraft paper or bamboo paper, all at 250-350GSM. The top of that range is what a 16oz tray needs: a filled tray is carried one-handed at the rim, and a light sheet flexes at the corner seams where the tray is deepest. Kraft carries the natural brown look that suits a sushi counter without extra print cost, white paper is the base for full-colour work, and bamboo is the option for buyers who need a non-wood fibre named on the specification sheet.
Coating decides whether the tray survives the sauce. PE lamination is the standard barrier and the cheapest route. PLA lining and PBS coating are the compostable routes, specified when the market asks for a compostable claim rather than a recyclable one. Water based coating suits buyers who need a repulpable tray and can accept a shorter hold time on very wet contents. All four are listed here, so the coating is chosen per market rather than per tray size.
